The season of autumn is arrived, and you can start to feel the flavours of wilds mushrooms and wilds games cooked slowly in the kitchen.
Here is my selection of wines for Autumn Season : There are some wines of “Terroir”, with a lot of flavours and very complex aromas of ripes reds fruits, spicy black peppers, liquorice note, leather and light note of vanilla, … And a very well-balanced harmony on the palate between the powerful and some elegants and fines tannins. - - - - GIGONDAS : " Domaine du Pourra " cuvée "Tradition" red 2004, àTo decant 30 mn before the service, and it’s a perfect agreement with a roasted leg of wild boar with a panful of wilds mushrooms.
- VACQUEYRAS : " Domaine de Montvac " cuvée "Vincila" red 2003, To decant 1 hour before, and it’s a perfect agreement with a furred venison stew in red wine served with a tasty polenta or quite simply fresh pasta.
- CÔTES DU VIVARAIS : "Domaine Mermès" red 2004, To decant 30 mn before, and it will be very good with wilds birds like pheasant or pigeon just roasted.
- CÔTEAUX DU TRICASTIN : " Domaine des Rosiers" red 2004 cuvée "St-Paul", To decant 1 hour before, and it will be very good with wilds birds like grive or caille typical birds from Provence.
